Good water is important, especially in summer time.  How convenient then, that sweet summer melons have plenty of H2O, especially – as the name suggests – WATERmelon.  Watermelons are rich in Vitamin A, B Vitamins, Vitamin C, Lycopene, and Potassium and, of course, Vitamin Yummy.

One raw food ingredient that I’m crazy about is citrus zest.  Adding pieces of the brightly colored outer layer of oranges, lemons, and limes to a recipe makes it taste extra-fresh and especially summery.  So it’s no surprise that many of the recipes you find in Raw Food Made Easy for 1 or 2 People Revised are 'zesty'.
