Raw Cucumber Salad for Thanksgiving Parties

Traditional Thanksgiving meals are delicious, but the food is generally rather rich. So to balance the cornbread stuffing, marshmallow-topped yams, and other heavy dishes, I like to serve a bowl of Cucumbers with Fresh Mint, a light, refreshing raw food salad.

I always enjoy bringing a food gift to holiday gatherings, especially for Thanksgiving. Raw food is my first choice for many reasons. A raw food salad doesn’t have to be refrigerated or reheated. That means my host doesn’t have to fuss with my gift; it just goes straight to the table.

Make Mine Mint

An interesting salad can serve as a raw food ambassador and give you an opportunity to share your love of fresh, uncooked food.  Salads are one of the most common raw recipes that people already enjoy in their diets without realizing it.  

The ingredients in my Cucumbers with Fresh Mint are already familiar to guests, so it’s popular at the adults’ table and the kids’ table, too.

One of the things I like about this particular salad is that it’s chunky. Rather than being sliced, the cucumber is peeled, seeded, and diced.  (You can add shredded carrot to add another texture dimension.)

Since cucumbers are naturally mild, it’s fun to add a ton of flavor to the dressing. In my recipe, the cucumbers are dressed in a heavenly combination of minced mint plus lemon juice, olive oil, garlic, salt, cumin, and fresh ground pepper.

Cucumbers with Fresh Mint isn’t just a holiday side dish to feed a crowd. I enjoy it as salad-for-one at lunchtime and dinner, and serve it with my vegan California Rolls.
