Celebrate Summer with a Raw Tropical Parfait

Raw food is about simplicity.  But simple doesn’t mean boring.  One of my favorite things to do as a raw food chef is to take fresh fruit and layer it into an eye-pleasing raw food dessert parfait.

In French, the word ‘parfait’ means ‘perfect’ and that’s what my easy, but elegant raw food recipe is.  It is traditionally served in a tall glass so that you can see the beautiful contrast of colors and textures.  Presenting it in a piece of stemware (such as a wine glass or parfait glass) gives it even more eye appeal.

Raw Food Dessert Parfait with Layers of Color, Flavor, and Nutrition
Typically, a parfait is made by alternating layers of fruit and ice cream, pastry cream, or whipped cream.  In a raw fruit dessert parfait, however, you replace these high-cholesterol creams with nutritious, heart-healthy nut milk ice cream, avocado-based pastry cream and mousses, or all-fruit puddings.  

Layer one or two mousses, puddings, or sweet sauces with sliced fruits or berries of different colors, such as strawberries, kiwifruit, bananas, mangoes, pineapple, and blackberries.

For a ‘tropical’ parfait that’s the perfect way to end a summer meal, combine Key Lime Mousse with Mango Pudding, fresh blackberries, and banana slices.  You can get the recipes for Key Lime Mousse here and for Mango Pudding here.

When all your ingredients are ready, start by spooning a layer of raw mousse in the bottom of the glass.  Follow that with a layer of raw pudding, a layer of berries, and a layer of bananas.  The colors of the fruit look beautiful against the delicately pale mousse and vibrant pudding.   

Continue to alternate the layers until the glass is full and then put a slice of banana and one whole berry on top as garnish.  Gorgeous!  

Serve it with a long dessert spoon so your guests (and you) can get every last bite.
