Drink Green Juice and Feel in the Pink for 2011

A lot of people I know are feeling a little sluggish at this time of year; ‘hungover’ from the indulgences of the recent holiday season. I was in the same boat myself until last week. That’s when I decided to go on a three-day juice fast.

My juice of choice was healthy, vibrant Green Juice

Green Juice is made with just five ingredients: celery stalks, kale leaves, cucumber, parsley, and lemon.  (You can click here to see the recipe).  If you prefer a sweeter juice, you can add a few drops of liquid stevia. 

In case you’re unfamiliar with stevia, it’s a bushy herb with an extremely sweet flavor. It is a great natural substitute for processed sugar, often said to be up to 300 times sweeter than sugar.  That means you can use by the drop, rather than the tablespoon.

Personally, I like the savory, refreshing flavor of unsweetened green juice. And I find the lemon really balances the ‘green taste,’ so it’s not necessary to add sweetness.  It’s strictly a matter of taste, however.

The Goodness of Green
I developed the Green Juice recipe for my cookbook Raw Food Made Easy for 1 or 2 People.   It is a regular part of my daily diet.  Every morning it’s either green juice or a smoothie for me.

Green Juice is a nutritional powerhouse that provides the vitamins, calcium and trace minerals your body needs to function.  But at the same time, it’s low in calories and sugar.  That makes Green Juice a satisfying and effective beverage to support weight loss and a great way to ‘reset’ your metabolism after the excesses of holiday food and drink.

For my fast, I made a large batch of Green Juice, divided it into three servings, and drank one for breakfast, one for lunch, and one for dinner...along with 1-1/2 quarts of water throughout the day.   It’s incredibly satisfying and simple, too.

Green Juice, White Teeth, Green Planet
There’s one thing you should be aware of with Green Juice.  The celery, kale, cucumbers, and parsley in this natural health ‘cocktail’ can make your teeth look a little green. 

My solution: I use a straw!  A straw helps the liquid bypass my teeth so that my pearly whites don’t get tinted by the chlorophyll-rich ingredients.

And to make sure that my straw ‘habit’ doesn’t impact the planet in a negative way, I don’t use plastic straws.  Instead, I have these nifty re-usable glass straws that I got from the Living Light Institute.
