It seems that whatever else may separate us, food is a common language we all speak. And one of the most interesting things I’ve discovered traveling around the world is how many similarities there are in the foods enjoyed by different cultures.
Take a filled dough pocket, for example. Italians eat ravioli, Central Europeans eat pierogi, and Asians eat dumplings. Each pocket is made with essentially the same basic ingredients of flour and water, but unique seasonings give each dish its regional ‘flavor.’
The same is true with raw food recipes. Add oregano, basil, and a drizzle of olive oil to a salad of shredded zucchini, tomato, and onion and you’ll be on a taste vacation in the sunny Mediterranean. Add a dash of cumin and a splash of lemon to those vegetables and you’ll be dining on a salad rich in the flavors of Turkish and Middle Eastern Cuisine. Add a little soy, ginger, and garlic, and you’ve got a heavenly taste of China.
A great recipe that you can play around with spice-wise is raw Garden Wraps. In my recipe, collard greens replace tortillas as the wrapper around a hearty portion of fresh veggies including crunchy carrots and creamy avocado.
The recipe also calls for two teaspoons of tamari which gives it an Asian flavor. But you could easily leave out the tamari and use a splash of balsamic vinegar for the taste of Mediterranean cuisine. Or you could oregano, cumin, and a pinch of chili powder to give your wraps a South of the Border taste.
