Stalk Talk

Some stalk vegetables are more familiar to us than others.  You probably already know stalk veggies such as broccoli and celery.  But they’re just two of the most famous citizens of the delicious Stalk Universe.  Let’s talk about them and some of their botanical brethren.

Stalk vegetables are perfectly named.  They are vegetables with edible stalks and generally edible leaves, too.  Asparagus, celery, fiddlehead ferns, rhubarb - yes, rhubarb is actually a vegetable! - are all stalkers.

  • Broccoli – Broccoli has a lot to offer beyond its gorgeous green color and earthy green taste.  Just 4 ounces of broccoli gives you more than 100% of your RDA of Vitamin C as well as providing 3 grams of satisfying protein.  And it does all that for just 32 calories.
  • Celery – Raw and traditional chefs around the world use celery as the base of soups and salads, and in delicately flavored juices.  Personally, I think a stalk of crunchy celery is a wonderful snack and a terrific alternative to other crunchy treats like chips.
  • Rhubarb – Most people think of pie when they think of rhubarb, but this flavorful stalk vegetable can be eaten raw like fruit.  Dip the stalks into a natural sweetener like honey and crunch away.
  • Asparagus – This popular stalk vegetable comes in twenty edible varieties which are divided into three groups; green asparagus which are the most common, violet asparagus which have a distinctive fruity flavor, and white asparagus, considered a true delicacy by top chefs worldwide.

I didn’t know that ferns were edible Jenny!?!

Is that all ferns or just “fiddlehead ferns” (which term I am not actually familiar with ~ I guess it must be an American expression)

Would love further clarification on this, as I have a fern growing in my garden smile

I don’t believe all ferns are edible—fiddlehead ferns is just an American term for a type of stalk vegetable. I’m not 100% sure, but that’s my thinking!
