Yield: 1⁄2 cup, 1–2 servings
With minced onion and crushed garlic on hand, you can make this classic recipe in five minutes.
Ingredients
- 1 ripe avocado, chopped
- 1 1⁄2 teaspoons minced onion
- 1 teaspoon fresh lime juice
- 1⁄2 teaspoon crushed garlic (1 clove)
- Dash salt
- Dash cayenne
Equipment
- cutting board
- chef’s knife, 8-inch
- measuring spoons
- garlic press
- citrus juicer or reamer
- small bowl
- fork
Place all the ingredients in a small bowl. Mash with a fork, leaving the mixture slightly chunky. Serve immediately.

Avocados are a perfect warm weather ingredient to keep on hand in your kitchen. They make a wonderful, satisfying addition to a breakfast fruit salad and the creamy basis of a light lunchtime soup. They can be quickly whipped into a cocktail party-friendly guacamole and can even become a luscious Crème Anglaise to serve over fresh fruit.
Avocado Crème Anglaise

Yield: 3/4 cup
This silky green cream is an avant-garde twist on traditional white whipped toppings.
Ingredients
- 1/2 cup mashed avocado (1 avocado)
- 1/4 cup light agave syrup
- 2 tablespoons water
- 1 vanilla bean, seeds only, or 2 teaspoons vanilla extract
Equipment
- measuring cups
- small mixing bowl
- cutting board
- chef's knife
- fork or whisk
- tablespoon
- paring knife
- food processor
Place all of the ingredients in a food processor fitted with the S-blade and process until smooth. Sop occasionally to scrape down the sides of the work bowl with a rubber spatula. Stored in a sealed container in the refrigerator, Avocado Crème Anglaise will keep for 3 days.

- 1 banana, diced
