Beat the Heat with Green Smoothies!

Who wants to spend hours in the kitchen making gourmet food in the summer? I’d rather be outside! When I need REALLY quick and easy, I rely on Green Smoothies. They are an healthy and delicious way to get several servings of fruits and green vegetables at breakfast or any meal. Here’s how you do it: To 1 serving (2 cups) of any favorite fruit smoothie, add a small handful (or 2-3 large leaves) of fresh greens, such as kale, spinach, chard, collards, Romaine lettuce, parsley, or cilantro. If you don’t have fresh greens, use a green powder. Add a little water if necessary, and blend until smooth. The mixture may turn green, but it will still taste sweet and fruity. This is a great way to sneak extra servings of greens into your diet or your kids’ diets. And without adding salt or oil, as people tend to do with salads.

Here are some of my favorite combinations, which make 1-2 servings:

Green Banana-Orange

1 banana
1 orange, sectioned, or ½ cup orange juice
½ cup water, optional
4 leaves kale or 1-2 tablespoons Vitamineral Green powder

Blueberry Kale

1 banana
1 orange, sectioned
½ cup water
½ cup frozen blueberries
small handful fresh spinach or 3 leaves kale

Mango Collard

2 mangoes, peeled and pitted
¼ cup water
2 leaves collard greens, chopped

Peach Spinach

4 peaches, chopped
½ cup water
large handful spinach

Strawberry Pineapple

1 cup strawberries, with green tops still on
½ cup pineapple
¼ cup water
